Preparation of New Orleans Pralines

If you visit New Orleans, pralines are the most sorted out food delicacies you will find in there. There are several stores available which sells these products. However, it should be noted that these products while you buy in readymade format, may not taste as great as that when you create it in your home. Have a look at the ingredients:

White sugar -1 1/4 cup,

Brown sugar- 3/4 cup,

Pecan halves - 2 cups,

Light cream - 3/4 cup,

Unsalted butter - 2 Tbsp,

Salt – Pinch,

Baking soda - 1/2 teaspoon,

Brandy/ vanilla - 1 teaspoon,

The oven needs to be preheated to temperature of around 300 F. Then, the pecan halves are placed on the baking sheet forming up a single layer, toast for ten minutes or so. During this time, just for once you need to turn the halves to other side. After ten minutes, take off the pecans and allow it to cool.

Take two baking sheets filled with a parchment paper. Set them aside. Mix the baking soda, black and brown sugar all together in a saucepan. Take this mixture and try to stir it in a very light cream. Then place the mixture over a medium flamed heat. While cooking you need to whisk it quite occasionally. The process will continue for 30 minutes on medium flame. After that, butter needs to be added to the boiling mixture and then stirring for 1 minute should undergo. After that, the entire mixture needs to be removed from the heat. Mix some brandy and pecans to undergo stirring. This will make them well coated. The stirring should continue as long the mixture reaches a slight cooling stage.
